Krill are pelagic crustaceans that mainly consume phytoplankton and some zooplankton and are in turn a major source of food for many larger marine animals. Although krill reside in all oceans, the Antarctic Krill species (Euphausia superba) is found exclusively in the Southern Ocean.

The phospholipids are a unique family of fatty molecules which are distinct from the main fats in our diet (triglycerides) in both their structure and their role in the body. Phospholipids are amphipathic molecules, meaning they have a water-soluble part, which enables them to function as components of biological membranes.
